Risotto to impress your date

Serving risotto make you seem like an Iron Chef expert, but really it's pretty easy. It takes a long time to prepare, but you can use that as an excuse to socialize in the kitchen with a glass of wine. Makes for a good date dish, as you can show off your skills with a dish that is hard to mess up.
